Black Bean Soup

This is a great Food Storage Recipe:

Black Bean Soup
2 tablespoons vegetable oil
1 green bell pepper, chopped
1 large carrot, peeled and thinly sliced
1 tsp Garlic Powder
2 cans black beans
1 (14 ounce) can chicken broth
2 cups cubed cooked ham
1/4 teaspoon cumin
1/2 teaspoon salt
black pepper to taste
1 cup shredded Cheddar cheese (optional)
1 cup sour cream (optional)

Heat oil in saucepan. Stir in green pepper, carrot, and garlic powder for about 5 min. Mix in 1 can of black beans and chicken broth. Using a blender, blend second can of black beans and mix in. Bring to a boil. Reduce heat add in ham, cumin, salt, and pepper. Simmer for 20 minutes.

You can add the cheese and sour cream to each bowl, but I think it is just as good without. Canned ham is a great alternative on this recipe!

I found the recipe (I altered it slightly) at allrecipes.com which is a great site (it is a lot like the Kraft site).
