4 cups instant nonfat milk
1 cup flour or 1/2 cup cornstarch
1 cup butter or margarine
Combine all ingredients in a large bowl; mix until it
looks like cornmeal. (I used my food processor).
Store in refrigerator until ready to use.
Use 1 cup mix to 2 cups cool water for a basic white sauce.
Add Mix & water in a sauce pan. Bring to a boil. Season to taste.
Chicken bouillon & or cheese work well for a basic base for most
casseroles & soups. It also can take the place of creamed soup.
Clam Chowder
1 tsp. margarine
1/2 cup onion chopped
1/2 cup celery, diced
3 large potatoes, diced
4 cups water
2 cups magic mix
1 tsp or 1 chicken bouillon cube
1 can minced clams
salt & pepper to taste
Cook potatoes. Drain & set aside saving water.
Saute onions and celery in margarine.
Use potatoe water & add enough more water to
make 4 cups liquid. Add bouillon & Magic Mix in
a saucepan; stir and simmer until thickened.
Add the rest of the ingredients; heat and serve.
Corn Chowder
2 cups Magic Mix
4 cups water
1 can creamed corn
1 can corn, drained, save the water
1-2 cups cooked chicken or turkey, flaked
1-2 bouillon cubes
Place Magic Mix, bouillon & drained corn juice & enough water to
make 4 cups liquid into a saucepan. Simmer until thickened.
Add the rest of the ingredients. Heat until hot. Serve with bread or crackers.
